blc wraps (pg 99) & cheesy chowder (pg 22)

blc wrap

recipe:

1 lb. bacon, cooked and cut into one inch pieces
4 tortilla shells, flour
1 c shredded cheddar cheese
1/2 head lettuce, shredded
mayonnaise

method

spread tortilla shells with mayonnaise. divide bacon, cheese, and lettuce among 4 tortilla shells; place on lower 1/3 of shell. fold over bottom, sides and then roll. makes 4 sandwiches.

thoughts

we completely disregarded everything except for the ingredients. instead, we piled far too many ingredients in proportion to the size of the wrap and then enjoyed eating them as they fell apart. we also used 3 cheese ranch dressing instead of mayonnaise. it was awesome.


cheesy chower

recipe

6 c water, boiling
8 medium potatoes, diced
2 c carrots, sliced
2 c celery, sliced
1 c onions, sliced
4 tsp salt
1/2 pepper
1 c butter
1 c flour
2 qts milk
2 lbs sharp cheddar cheese

method

add poatoes, carrots, celery, onions, and seasonings to boiling water. simmer. melt butter in large saucepan. stir in flour. gradually stir in milk. boil 1 minute then add cheddar cheese. add to potato mixture. cook over medium heat.

note: ham can be added if desired.

thoughts

the final product was delicious, however, getting there was quite an adventure. while chopping veggies, megan's julia child complex once again reared its ugly (yet lovable) head.



we recommend using a large pot for the flour/butter/milk/cheese mixture, as we ended up having to divide it between two, as seen here. i think we'd also like to take a moment and ask that you be patient with the photo quality for the time being, as we have to use the camera on caitlin's computer.

we also recommend that, in addition to checking you have all the ingredients, you also make sure that you have the proper amounts...otherwise, someone will be forced to make a quick grocery stop:



again, as we said, both dishes turned out beautifully, and were it was the perfect meal to eat on such a chilly day.



we would also like to leave you with a warning, to not get impatient when bringing the milk mixture to a boil. otherwise, things burn on the bottom of pans and you reduce what was a fine, upstanding, new SOS pad to this...
